Presentation of Château Paloumey

Château Paloumey has always been committed to producing excellent Médoc wines. Under the leadership of winemaker Pierre Cazeneuve, our ambition is to create an authentic Grand Vin, a true reflection of the Paloumey terroirs: elegant, airy, endowed with pure fruit, whose realization is above all guided by the notion of pleasure.

The terroir

Certified organic since the 2019 vintage, Château Paloumey comes from the blending of our 2 distinct terroirs, located in the Haut-Médoc appellation. In Ludon-Médoc, our 27 hectares of vines flourish on the Garonne gravel hillsides from the Quaternary era. This unique combination of sand and gravel, devoid of clay, provides an ideal environment for the development of Cabernet Sauvignon, the king grape variety of the Médoc. Additionally, our 10-hectare vineyard in Cussac-Fort-Médoc is situated on ancient Garonne gravels, characterized by slightly more clayey soil that gives structure to our wines. Today, Château Paloumey’s grape varieties consist of 52% Cabernet Sauvignon, 41% Merlot, 4% Cabernet Franc, and 3% Petit Verdot.

Precision in winemaking

Faced with the challenges imposed by climate change, Pierre Cazeneuve is convinced of the need to evolve our production methods to create wines of a unique style, more accessible in their youth. With increasingly warm vintages and therefore riper grapes, it is essential to explore new winemaking techniques. That’s why we called upon Axel Marchal, consultant and professor-researcher in oenology at the University of Bordeaux, to rethink the extraction work and develop softer and more velvety wines. In this perspective, Pierre Cazeneuve continues his research by introducing 5 to 15% of the stalks into the fermentation process. This practice aims to bring increased density and sapidity in the mid-palate, as well as beautiful aromatic freshness.

Château Paloumey is our emblematic cuvée certified in organic agriculture, carefully crafted by our team, paying particular attention to each of our parcels. Mainly composed of Cabernet Sauvignon, the blend varies slightly every year, highlighting the unique character of each vintage.Château Paloumey is distinguished by the finesse of its tannins and by a delicate and balanced body. From its young age, it reveals a pure and airy expression of fruit, in perfect echo with the precision of the aromatic bouquet.Its traditional aging of 12 months in barrels, a third of which are new oak, gives Château Paloumey complexity and balance. A wine that is both elegant and delectable, our team likes to pair it with dishes with a strong character, such as Gironde eel revisited as tataki, or with melt-in-your-mouth aubergines with miso and ginger to stay in oriental flavors.
